Low-Fat Orange-Raisin Bran Bread

Ingredients
1-1/2 cups flour
1 cup sugar
1 Tbsp. baking powder
1/4 tsp. salt
1 egg
3/4 cup fat-free milk
2 Tbsp. grated orange peel
1/2 cup orange juice
2 Tbsp. oil
2 cups Post Bran Flakes
3/4 cup raisins
Directions
PREHEAT oven to 350°F. Mix flour, sugar, baking powder and salt in large bowl; set aside. Beat egg, milk, orange peel, orange juice and oil with wire whisk until well blended. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal and raisins.
POUR into 9x5-inch loaf pan sprayed with cooking spray.
BAKE 55 min. to 1 hour or until toothpick inserted in center comes out clean. Cool 10 min. in pan; remove from pan to wire rack. Cool completely. Cut into 18 slices to serve.
